Sartes has a history dating back to Roman times. The village was located on the route of the Roman road linking Lyon to Trier, attesting to an ancient occupation.
Before the French Revolution, Sartes was a parish of the diocese of Toul, under the bailiwick of Neufchâteau and the provostship of Bourmont.
In 1790, during the Revolution, the commune of Sartes was created and integrated into the Vosges department.
In the 19th century, the village experienced predominantly agricultural activity, with land dedicated to cereal crops and livestock.
